 "Chicken Chaman" is a popular Kashmiri dish known for its rich and flavorful taste. It's a creamy chicken curry prepared with a variety of aromatic spices and yogurt. Here's a basic recipe for making Chicken Chaman:


Ingredients:

- 500 grams boneless chicken, cut into bite-sized pieces

- 1 cup thick yogurt (Greek yogurt works well)

- 1 large onion, finely chopped

- 2-3 tablespoons vegetable oil or ghee

- 1 tablespoon ginger-garlic paste

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (adjust to your spice preference)

- 1/2 teaspoon garam masala

- 1/2 cup tomato puree or chopped tomatoes

- 1/2 cup fresh cream (optional)

- 1/2 cup grated paneer (Indian cottage cheese)

- Salt to taste

- Fresh coriander leaves for garnish


Instructions:


1. In a bowl, marinate the chicken pieces with yogurt, half of the ginger-garlic paste, cumin powder, coriander powder, turmeric powder, red chili powder, and a pinch of salt. Mix well, cover, and let it marinate for at least 30 minutes (longer for better flavor).


2. In a large pan or kadai, heat the vegetable oil or ghee over medium heat. Add the finely chopped onions and sauté until they turn golden brown.


3. Add the remaining ginger-garlic paste to the onions and cook for a minute until the raw smell disappears.


4. Add the marinated chicken to the pan and cook on medium-high heat until the chicken is partially cooked and the yogurt is well incorporated. Stir occasionally to prevent sticking.


5. Add the tomato puree or chopped tomatoes to the chicken. Mix well and let it cook until the tomatoes are soft and the chicken is fully cooked and tender.


6. Stir in the garam masala and adjust salt and spices according to your taste.


7. Lower the heat and add the fresh cream (if using) and grated paneer to the chicken mixture. Mix well to combine and let it simmer for a few more minutes to allow the flavors to meld.


8. Garnish with fresh coriander leaves.


9. Serve hot with naan, rice, or any Indian bread of your choice.


Note: Chicken Chaman is a rich and indulgent dish, so you can adjust the amount of cream and paneer according to your preference. It's a great dish to enjoy on special occasions or as a treat for your taste buds. Enjoy!
